KHEER WITH DATE AND FIG
Ingredients
- 2 litrs milk
- 3\4 cup long grained rice (basmati)
- 1\2 chopped figs (anjeer)
- 1\2 chopped dates (khajur)
- a pinch of saffron (kesar) strands
- 1\2 cup honey
- 4 cardamoms
- almond (badam) for garnishing
- pistachios for garnishing
Method
Wash and soak the rice for ½ an hour.
Put the milk in a heavy bottomed pan and allow to cool.
Add the drained rice and cook for 10 minutes on a low flame.
Now add the figs ,dates and saffron and cook till they are thick and creamy, stirring once in a while.
Add honey and remove from fire.
Sprinkle cardamom powder and nuts and refrigerate.
Serve cold.
