Dahi Vada Recipe


                                                 Whip up your favorite street food at home with this simple recipe. Vada made of dhuli urad ki daal, deep fried, served with fresh yogurt and drizzled with some tangy chaat masala. Experience bliss in every bite!




Ingredients:

 For vada

1/2 Cup Urad daal
1/2 cup moong dal duli
Salt to taste
1/4 tsp Baking powder
1/2 tsp cumin seeds
1 tsp grated Ginger
Oil to fry

For Dahi :



2 cups Dahi (yogurt)
Finely chopped coriander leaves
1-2 green chilies chopped
Salt to taste
2 tsp Roasted cumin(jeera)powder
Red chili powder to taste
1 tsp sugar

How To Make Dahi Vada:



For vada - Clean, wash and soak the daal overnight or 7 - 8 hrs.
Separate the water and grind them together into smooth paste without water or if necessary then very little water. The paste should be coarse and not fine.
Take out the paste in a bowl and then beat the mixture for 10 - 15 minutes till the mixture becomes fluffy. This will make the vadas soft.
Add salt, cumin seeds, ginger and baking powder.
Heat oil in a pan for frying and drop small balls of batter in the oil with the help of a spoon. The flame should be medium. Do not put more than 8 - 9 balls.
Fry till golden brown. Then take them out on kitchen paper.
In a bowl fill 2 cups of warm water with 1 tsp salt and put the vadas in it. Let them soak for 1/2 hr.
Meanwhile prepare the dahi.

 For Dahi - Beat the curd smooth and put in a bowl.
Keep in refrigerator for an hour to get chilled.
Before serving add salt, red chili powder, sugar and roasted cumin powder to the dahi .
Serving - Squeeze out the vadas from the water and in a deep dish arrange the wadas and pour dahi over them.
Pour imli (tamarind) chutney and green chutney.
Garnish with coriander and slit green chillies.
Serve the dahi vadas chilled.

Chicken Biryani

                                             Chicken Biryani


     

Ingredients

For Chicken
1 tablespoon Vegetable oil
10 grams Garlic (grated)
10 grams Ginger (grated)
Serrano chili peppers (to taste, minced)
5 grams Mint (finely chopped)
10 grams Cilantro (finely chopped
1 tablespoon Garam masala
1/2 teaspoon Ground cinnamon
1 teaspoon Salt
900 grams Bone-in skin-on chicken thighs

For Rice

6  cupsWater
 Salt
 5  Pods green cardamom (smashed)
1 teaspoon Cumin seeds
1 Bay leaf
360 grams Basmati rice (~2 cups)

For Onions

2 tablespoons Ghee
2 Medium onions (sliced thin)

For Biryani

1 cup Reserved boiling liquid (from rice)
1/2 teaspoon Saffron threads
Cilantro (for garnish)

Steps


To marinate the chicken for the biryani, combine the vegetable oil, garlic, ginger, chili peppers, mint, cilantro, garam masala, cinnamon and salt in a large bowl and stir together. Add the chicken pieces and toss together making sure the chicken is thoroughly coated in the marinade. Allow the chicken to marinate for at least 1 hour or up to overnight.



·  In a pot wide enough to hold the chicken in a single layer, add the ghee and onions and saute the onions until they are well caramelized (15-20 minutes). Transfer the caramelized onions to a bowl and set aside.

While the onions caramelize, prepare the rice by washing in a strainer under cold running water until the water runs clear.

To par-boil the rice, add the water, salt, cardamom, cumin and bay leaf to a pot and bring to a boil. Add the rice and boil for 7 minutes. Drain the rice, reserving 1 cup of the liquid.


·  In the pot you caramelized the onions in, add the chicken in a single layer, skin-side down. Fry until golden brown on one side (about 5 minutes). Flip the chicken over and fry the other side until golden brown. Transfer the chicken back to the bowl you marinated it in.


·  To assemble the biryani, add the saffron to the rice and toss to distribute evenly. Add half the rice mixture to the bottom of the pot you browned the chicken in.

Top the rice with the chicken in a single layer.

Top the chicken with an even layer of caramelized onions.


·  Finish putting together the Biryani by adding the rest of the rice in an even layer. Add 1 cup of reserved liquid from boiling the rice. Cover the pot with a lid and put the pot on the stove over medium heat and set the timer for 20 minutes. When you can see steam escaping from under the lid, turn down the heat to low and continue cooking until the timer goes off and then turn off the heat.


·  Without opening the lid, set the timer for another 10 minutes to steam the biryani.


·  Mix the Chicken Biryani together and then transfer to a serving platter. Garnish with fresh cilantro and serve.

                                                   It is an adapted recipe from the popular chicken tikka recipe for non meat eaters or paneer lovers. it's a good idea to serve a starter like Tawa Paneer Tikka, which you can easily grill on a tawa, no need of oven or tandoor for this. What makes this Tawa Paneer Tikka recipe really special is that it is cooked on a Tawa. This is extremely relevant in an Indian context because the penetration of grills, microwaves and owens is still under 5% of the population. The tawa on the other hand is found in almost all Indian households. Paneer recipes are a much loved dish of vegetarians and paneer tikka is extremely popular among paneer recipes. 

Paneer tikka recipe can be used as a starter and is even enjoyed as a main dish.

 

Ingredients to make Tawa Paneer Tikka

400 gms- Paneer (cottage cheese )
1 1/2 cup- curd
salt to taste
1/2 teaspoon- red chilly powder
1/2 teaspoon- garam masala powder
1 tablespoon- chat masala
1/4 teaspoon- cumin powder
1/2 teaspoon- tandoori masala
2 tablespoon- lemon juice
5 tablespoon- oil or butter
1 pinch red food colour
2 green capsicums cut it into 2 inches cubes
1 large onion cut from the side in 2 inches cubes
10 skewer sticks

How to make Tawa Paneer Tikka

·        cut paneer(cottage cheese) into 2 inches cubes

·        Mix all the masalas n powders in a bowl with curd and lemon (salt, red chilly powder, garam masala powder, chat masala, tandoori masala, cumin powder, red food colour)
·        Now add paneer (cottage cheese) into this mixture and marinate for a few hours.
·        Add capsicum and mix gently.
·        Add onion cubes and mix well.
·        Now keep it in the refrigerator for an hour.
·        Take the skewers n start threading capsicum, onion, paneer, onion and capsicum cubes in that order. In each skewer you have to add two marinated paneer cubes.
·        Heat non stick tawa on gas. Pour 1 tablespoon oil or butter on the tawa.
·        Place your marinated paneer tikka sticks on the tawa and cover with a lid.
·        Cook on a low flame. In between u have to turn your paneer tikka sticks and cook well. Apply little oil with the help of a brush.

·        STake out on a plate.

SHAHI TUKRA

Ingredients
for rabri:
·         1 litre milk, full cream cows / buffalo milk
·         ¼ cup sugar
·         ½ tsp cardamom powder
·         2 tbsp saffron milk 

for sugar syrup:
·         ½ cup sugar
·         ½ cup water
·         few saffron threads

for serving:
·         6 slice bread, white or brown
·         3 tbsp Ghee
·         few dry fruits (cashews, almonds, pistachios), chopped

Instructions ( 1 cup =255 ml)

step 1

Heat water and sugar in pan, add the saffron strands once the water starts boiling. Once the sugar syrup turns a little thick. Put off the stove and keep aside.

Step 2

In an another pan, boil the milk in medium flame until the milk is reduced to about 1/4th of its original quantity.

Step 3

Do not forget to stir continuously, once the milk is reduced, add cardamom powder, sugar mix well. Continue to heat it while stirring continuously for 5 more minutes.

Step 4

Remove from heat and set aside. Now take the bread slices and cut them into sides and slice it as two triangles.

Step 5

Heat ghee in a pan and shallow fry the bread till they are crisp and golden brown on each side. Once the bread slices are fried, soak each slice in the sugar syrup for about a minute.

Step 6

Arrange it on the serving dish. Pour the rabri over the bread slices and garnish with the chopped nuts. Serve warm.
